Don't settle for boring. Kick up a quick tuna sandwich with marinated grilled artichokes.
1 can favorite tuna, drained
2 stalks celery, finely diced
1 green onion, finely diced
dash dried dill weed
palmful fresh parsley, minced, about 2 Tbsp
1 Tbsp freshly squeezed lemon juice
2 Tbsp good real mayonnaise
Marinated grilled artichoke hearts, to taste (I used Trader Joe’s)
4 slices, The best bread you can get
Mix together the ingredients from the tuna to the mayonnaise in a medium bowl. Toast the bread. Drain and chop a few of the artichokes (to taste) and lay on one slice of bread. Spoon half the tuna salt on another slice.
Fold together and cut sandwich in half. Repeat with other 2 slices of bread.
Makes 2 sandwiches.
