I made this dip for my brother and sister in-law's July 4th picnic at their SugarDay horse farm just outside Charlottesville Virginia. A big hit, many people asked the recipe for. Here it is.
16 oz sour cream
2 Tbsp best real mayonnaise
4 oz finely shredded extra sharp cheddar cheese
1/2 cup frozen spinach thawed and patted dry
1 green onion, diced
1 clove garlic, finely minced through a press
1 rounded Tbsp prepared horseradish
1/2 packet Lipton Onion Soup powder
1/4 tsp crushed red pepper flakes
Mix ingredients together in a bowl. Allow to meld for at least 30-60 minutes, in the refrigerator. Stir well before serving, and garnish with cayenne pepper and sliced green onion.
Makes 16 ounces dip.
