Chocolate Dipped Honey Roasted Peanut Butter Cookies

These are perhaps the best cookies I have ever made. What could be better than peanut butter cookies? Peanut butter cookies dipped in chocolate and sprinkled with honey roasted peanuts, that's what!



2 sticks butter (1 cup), room temperature

1 cup chunky peanut butter

1-1/2 tsp vanilla extract

1-1/2 cups brown sugar

3/4 cup white granulated sugar

2 eggs, room temperature


Dry Ingredients

2-3/4 cup all purpose flour

3/4 tsp baking soda

1-1/2 tsp baking powder

1/2 tsp kosher salt


12 oz bag semi-sweet chocolate chips

1 tsp coconut oil

1 cup honey roasted peanuts, finely chopped


Beat the butter and peanut butter together until smooth. 

Add the vanilla the sugars and beat together until smooth. Add the eggs one at a time, beating well with each addition.


Now whisk together the dry ingredients. Add to the sugar mixture and mix together into a stiff even dough.

Refrigerate dough for an hour. Preheat oven to 350F.


Scoop out or form golf-ball sized balls onto parchment lined cookie sheets. Flatten balls with the tines of a fork in a criss-cross pattern.

Bake 18-20 minutes. Cool for 3-4 minutes. 

Then transfer to a cooling rack to cool to room temperature.

Meanwhile, melt the chocolate chips over a double boiler. Spray with the coconut oil, which gives a sheen to the chocolate. 

Transfer chocolate to a narrow bowl so it is at least an inch deep.


Dip one end of each cookie into the chocolate and place on a parchment paper. Sprinkle chocolate with chopped peanuts. 

Allow the chocolate to harden completely - a stay in the refrigerator can help harden the chocolate.


Makes 3 dozen cookies.

'Back-of-the-bag' King Arthur Oatmeal Bread

This is one of the best loaves of bread I have ever made, based on a famous recipe.  Friends swear about King Arthur recipes, and now I do too.  I only modified King Arthur's recipe slightly, adding the yolk of the egg I used for the eggwash on the crust. Haddock Roasted with Aioli and Tomatoes

This is a simple yet suculent way to roast fish. Here I use haddock, but you could use most any fish including cod or tilapia, or as I did on the west coast, wild-caught Rockfish (delicious). The tomatoes offer a fresh flavor complement to the fish slathered with a rich aioli topping.
