Simple fresh salads with fresh herbs from the garden are on tap for this summer. No garden? No excuses. You have windows, don't you?! Use 'em and grow at least one herb - it will brighten up not only your dishes but your attitude.

1 cucumber
6-8 red radishes, cleaned and sliced
1/2 orange pepper, diced
12 blackberries
1 green onion, diced
2 Tbsp fresh parsley, minced
2 Tbsp fresh mint, minced
Dressing:
juice of 1/2 lemon
2 Tbsp seasoned rice vinegar (or other favorite vinegar)
1 tsp whole grain Dijon mustard
2 Tbsp olive oil
1/4 tsp dried (or fresh!) dill weed
salt and pepper to taste
Whisk together the dressing ingredients in a bowl.
Coarsely peel the cucumber, leaving a few slivers of dark green skin on for accent. Trim ends and slice cucumber in half lengthwise. Now cut cucumber into half moons.
Add the cucumber along with the pepper, blackberries, onion, parsley and mint to the bowl with the dressing. Toss well and allow to marinate for at least 30-60 minutes in the refrigerator, stirring every 10 minutes or so.
Serves 4 as a small side salad.
