This is a simple fresh pizza to make when tomatoes and basil are abounding. Fresh, light and such a delight.
1 cup favorite tomato sauce (I used My Simple House Tomato Sauce)
2 cups leftover roasted chicken, shredded
2 medium fresh ripe tomatoes, diced
1/4 lb favorite meltable cheese (I used Fontina), sliced
Palmful fresh basil leaves, torn
1/2 lb fresh ricotta (I used Trader Joe’s)
2 Tbsp shredded parmigiana cheese
Crushed red pepper flakes, to taste
Preheat oven to 450F. Spread tomato sauce evenly over pizza crust. Top with chicken and cheese.
Follow that with the tomato, ricotta and basil leaves. Garnish with Parmigiana cheese and pepper flakes.Bake for about 20 minutes, or until pizza is browned and cheese is melted and bubbly.
Serves 2-3.
